No-Bake Choco-Luxe Delight

Layers of chocolatey goodness meet a delicate biscuit base, creating a no-bake delight that’s as easy to make and is delicious.

While this recipe is GERD-friendly in moderation, those with sensitive reflux should take care with ingredients like chocolate and coconut cream.

No-Bake Choco-Luxe Delight

Ingredients:

Biscuit Base:

  • 150g gluten-free biscuits (e.g., Digestive-style or oat-based)
  • 2 tablespoons coconut oil or plant-based butter, melted

Chocolate Mousse:

  • 1 ripe avocado
  • 1/2 cup cooked white rice (cooled)
  • 3 tablespoons high-flavanol cocoa powder
  • 1/4 cup date syrup (or substitute with honey for non-vegan or maple syrup for a vegan option, adjust to taste)
  • 3-4 tablespoons barista coconut milk (or other plant-based milk)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Method:

Biscuit Base:

  1. Prepare the Base: Crush the gluten-free biscuits into fine crumbs using a food processor or place them in a sealed bag and crush with a rolling pin.
  2. Combine Ingredients: Mix the biscuit crumbs with the melted coconut oil or plant-based butter until evenly coated.
  3. Assemble the Base: Press the mixture into the base of serving glasses or ramekins to form an even layer. Refrigerate for 15-20 minutes to set while you prepare the mousse.

Chocolate Mousse:

  1. Prepare Ingredients: In a blender or smoothie maker, combine the ripe avocado, cooked white rice, cocoa powder, date syrup (or alternative sweetener), barista coconut milk, vanilla extract, and a pinch of sea salt.
  2. Blend: Blend until completely smooth and creamy. Start with 3 tablespoons of barista coconut milk and add an additional tablespoon if the mixture seems too thick.
  3. Taste and Adjust: Taste the mousse and adjust sweetness or cocoa intensity, adding a bit more syrup or cocoa powder if needed.

Assemble:

  1. Layer the Mousse: Spoon the chocolate mousse over the chilled biscuit base in the serving glasses or ramekins, smoothing the top with a spatula.
  2. Chill: Cover and refrigerate for at least 1-2 hours to allow the mousse to firm up and the flavors to meld.

Garnish and Serve:

  1. Garnish: Just before serving, top with optional shaved dark chocolate, a sprinkle of biscuit crumbs, or fresh berries. For a festive touch, add edible gold dust or a few pomegranate seeds.
  2. Enjoy: Serve immediately and savor the rich, chocolatey flavor with a hint of nuttiness from the rice and avocado.

  • High-Flavanol Cocoa Powder: Cocoa flavanols are known to support cardiovascular health by improving blood flow and reducing blood pressure. They also contain antioxidants that help combat oxidative stress.
